do you dry your wood prior to shipment

All one inch and two inch material is kiln dried down to 14% or less.The logs are air dried and the moisture content varies between 16% - 20%

It depends on the type of material , trees, logs, beams etc.... on average 3-6 months, if not longer.

I've read that it takes 36 months for cypress to fully air dry. What is the moisture content of your logs @ 3 - 6 months

what is the moisture content of your delivered logs?

The is a large range depending on how you measure the moisture content...the surface of the logs would be drier than the inter core of the log.
